Honey-Walnut Cookies
Take 1 roll of refrigerated sugar cookie dough. Quickly cut it into 1/4 inch slices (it gets soft fast) and lay them out on a 15 x 10 pan, very close together. Now set that aside.
In a medium bowl, mix 1 cup finely chopped walnuts; 1/4 cup brown sugar; 1 teaspoon cinnamon; 1/4 cup honey; and 1 teaspoon lemon juice. Now set that aside, and go back to the cookie dough.
Press the dough slices flat, to form a solid crust. (Use a buttered spoon, or just use clean fingers and work fast.) Now take the nut mixture and crumble it over the crust; it doesn't need to make a solid layer, leave it a bit dappled.
Bake at 350F for 15 to 20 minutes, until lightly browned.

These have the honey, walnut and cinnamon of baklava; they're delicious. They don't get dry, either; in fact, they're softer and tastier the day after baking.
