Cinnamon bread

I process my dough in my bread machine; if you make bread by hand, I'm sure you can figure out how to do it that way (or find a conventional bread recipe and adapt the instructions).
7 ounces water (3/4 cup plus 2 tablespoons)
1/4 cup honey
1/4 tsp cinnamon
1 1/2 cups flour
1/2 cup whole wheat flour
1 TBS gluten (optional)
1 1/4 tsp salt
1 cup oats (quick or old fashioned)
2 TBS butter or margarine
2 tsp yeast or 1 1/2 tsp bread machine yeast
When dough is ready, punch down, and roll out in a rectangle-- about 9 inches x however long you can make it. Brush with water, then sprinkle with a mixture of 1/4 cup sugar, 1 tsp cinnamon, 1/4 tsp lemon peel (optional). Roll up, place on a greased pan or parchment paper. Let rise; bake for 40 minutes at 375F.
(You can do this in a loaf pan; just make your rectangle as wide as the pan is long. It's okay if you have to scrunch the roll a bit to get it in!)
